You guys. This is a soup that you're gonna need in your life. Even if you're not doing low-carb, it's still so delish, so you can consider the low-carb just a bonus. 

Here's the deal. I've been on a soup kick lately. It's probably the whole 'it's January and it's really cold' thing that's making me need to make my insides all warm, and soup is like the main food that warms you up and makes ya feel all cozy and comfy. 

I'm also eating low-carb right now. Not low-carb as in I can cook a package of bacon and dance around in the kitchen as I devour 8 slices (though that sounds heavenly), but low-carb as in I'm trying to eat as many whole and nutritious foods (read: less processed foods), and also keeping that potato/bread/pasta intake low. This girl has a wedding dress to shop for in the spring, so #sacrifices.

And as circumstance would have it I had a rotisserie chicken in my fridge that I was plannin' on using in salad, but one Oprah 'A-ha!' moment later I was on a mission to make some chicken noodle soup. Sub zucchini noodles. Sub almond flour. 

This recipe is pretty straight forward. And easy, which is good because sometimes you got things going on and you really don't feel like slaving away in the kitchen after work on a Tuesday. You can throw this together on a Sunday and it's good allllllll week long. 

You can of course use regular chicken if you'd like (or none if you're vegetarian), and to be honest I thought I had more chicken broth at home than I did so when I was cooking the recipe I ended up having to sub in a lil' chicken stock, which was a-okay. So work with what you have. This recipe isn't fussy, but instead it's fun and easy, which is what cooking should feel like!

A quick note on products I used for this recipe. If you don't have a spiralizer I highly recommend The Inspiralizer. I've tried the other ones out there and definitely believe that this one is the best in the market. 

Also, I use almond flour instead of regular flour because I'm doing low-carb, and I've found the best price to be on Amazon. I bought this 2 lbs. bag for just over $11, which is a steal; it was over $15 at two of my grocery stores in town.

Low-Carb Chicken and Zucchini Noodle Soup
Low-carb/Keto friendly, this creamy soup is comforting, delicious, and packed with flavor.
Ingredients
  • 3 Medium Zucchini's, Spiralized Blade C
  • 2 c. Rotisserie Chicken, shredded
  • 1 Small Yellow Onion, diced
  • 3 Whole Carrots, peeled and diced
  • 3 Stalks Celery, diced
  • 6 c. Chicken Broth
  • 1 tbsp. Extra-Virgin Olive Oil
  • 1 c. Half & Half
  • 1/2 c. Almond Flour
  • 1/4 c. Unsalted Butter
  • To Taste Salt
  • To Taste Pepper
  • 1 1/2 tbsp. Dried Parsley
Instructions
1. In a large skillet warm the olive oil over medium-high heat. Add the onions, carrots, and celery, sautéing for 10 minutes or until the carrots begin to soften (it’s okay if the carrots aren’t totally soft yet, they’ll finish cooking in the soup). 2. Add the shredded chicken to the vegetables, and sauté for another 5 minutes. Set aside.3. In a large pot, add the chicken broth and lightly season with salt and pepper. Add the vegetables and chicken, bring to a boil, then let simmer on low for 15-20 minutes, until the carrots are soft.4. In a small sauce pan melt the butter. Slowly add the almond flour, whisking to combine and getting out any clumps. 5. Slowly add the half and half to the butter and almond flour, whisking to combine. Season with parsley, salt and pepper, then cook on low for 2 minutes or until the mixture starts to thicken.6. Add the almond and butter mixture to the soup pan with the broth, stirring to combine.7. Finally, add the zucchini noodles to the soup pan, cooking for 2-3 minutes. Enjoy!
